You should have: • Confident knife skills and safe blade handling • Physically fit to lift carcasses and stand all day The role involves: • Run the band saw to cut cleanly through bone • Dress the chilled counter and rotate stock by date • Keep halal cuts separated and clearly handled • Sharpen and hone knives on a steel and whetstone • Debone shoulders, legs and loins with a boning knife Freshers welcome — about 5 years of practice is enough.
