You should have: • Quick and accurate on the weighing scales and order maths • Physically fit to lift carcasses and stand all day The role involves trim fat, sinew and silver skin off the cuts; weigh, price and label cuts for the display case; vacuum-pack and wrap customer orders; take customer orders and advise on cuts and cooking; keep HACCP hygiene records and sanitise the block and tools; sharpen and hone knives on a steel and whetstone.
