Requirements: • Knowledge of halal slaughter and handling where required • 2+ years experience working as a butcher • Food hygiene / HACCP certificate On the job you will handle: • Mince meat and prepare keema on the grinder • Trim fat, sinew and silver skin off the cuts • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools • Break down beef, mutton and chicken carcasses into primal cuts • Dress the chilled counter and rotate stock by date Part-time with flexible hours.
