Ideal candidate: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes The role involves score the top of loaves before baking; grease and clean baking trays, tins and moulds; boil sugar syrup for glazes and icing; weigh and mix flour, yeast, water and salt to the day's recipe; laminate puff and croissant dough by folding in the butter. 6+ years on the tools preferred.
