You should have: • 2+ years' experience as a baker • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens On a typical shift you will keep work surfaces and equipment clean to food-safety standards; prove dough in the proofer at the right temperature and humidity; pipe and fill cakes, pastries and cream rolls; score the top of loaves before baking.
