Head butcher — Charles County

Now hiring: we are hiring a head butcher in Charles County, Maryland. You will be based in a hotel or restaurant butchery. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler • Physically fit to lift carcasses and stand all day On a typical shift you will run the band saw to cut cleanly through bone; debone shoulders, legs and loins with a boning knife; trim fat, sinew and silver skin off the cuts; dress the chilled counter and rotate stock by date; stuff and link fresh sausages with casings; season and marinate meat on request.
