Ideal candidate: • Confident knife skills and safe blade handling • Knowledge of halal slaughter and handling where required The role involves: • Keep HACCP hygiene records and sanitise the block and tools • Keep halal cuts separated and clearly handled • Run the band saw to cut cleanly through bone • Portion steaks, chops and cutlets to the ordered weights Freshers welcome — about 4 years of practice is enough.
