You should have: • Good teamwork and clear communication under pressure • Familiar with North Indian, tandoor and continental cooking • Sound knowledge of HACCP and food safety standards Day to day you will prepare the mise en place before each service; chop, dice and portion vegetables, fish and meat; prepare stocks, sauces and soups from scratch; plate and garnish dishes for a quick pass to service; follow standardised recipes and stick to portion sizes.
