Requirements: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate The role involves weigh, price and label cuts for the display case; keep HACCP hygiene records and sanitise the block and tools; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights.
