Now hiring: we are hiring a trainee butcher in Tofa, Kano State. Day to day you will keep HACCP hygiene records and sanitise the block and tools; sharpen and hone knives on a steel and whetstone; monitor chiller and freezer temperatures to keep the cold chain; trim fat, sinew and silver skin off the cuts; mince meat and prepare keema on the grinder; vacuum-pack and wrap customer orders. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Food hygiene / HACCP certificate • Able to use a band saw, grinder and sausage filler Six days a week, one day off.
