On the job you will handle: • Portion steaks, chops and cutlets to the ordered weights • Monitor chiller and freezer temperatures to keep the cold chain • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Trim fat, sinew and silver skin off the cuts • Debone shoulders, legs and loins with a boning knife Ideal candidate: • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling 4+ years on the tools preferred.
