Urgent requirement: we are hiring a confectioner in Walton County, Florida. You will be based at a neighbourhood confectionery. You should have: • Able to stand for long hours in a hot kitchen • Basic cake decorating and piping skills • Familiar with deck, rack and convection ovens Day to day you will weigh and mix flour, yeast, water and salt to the day's recipe; monitor oven temperature and baking time for each batch; prove dough in the proofer at the right temperature and humidity; laminate puff and croissant dough by folding in the butter; shape loaves, rolls, baguettes and buns by hand; score the top of loaves before baking. Six days a week, one day off. Performance bonus on top of base pay. We offer $4,800 per month plus benefits. Contact us to fix an interview.
