Immediate opening: dough maker (California)

Urgent requirement: we are hiring a dough maker in San Mateo County, California. You will be based at a cake shop. Requirements: • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving Your main tasks: • Prove dough in the proofer at the right temperature and humidity • Weigh and mix flour, yeast, water and salt to the day's recipe • Boil sugar syrup for glazes and icing • Grease and clean baking trays, tins and moulds 4+ years on the tools preferred. Pay around $2,800 per month, based on your experience. Six days a week, one day off. Walk-in interviews this week.
