You should have: • Sound knowledge of HACCP and food safety standards • Familiar with North Indian, tandoor and continental cooking • Strong knife skills and speed on the line You will prepare stocks, sauces and soups from scratch; chop, dice and portion vegetables, fish and meat; taste and adjust seasoning for consistency; follow cleaning schedules and wash down work surfaces; follow standardised recipes and stick to portion sizes; check fryer oil and change it when it breaks down.
