Vacancy available: we are hiring a sausage maker in Cleburne County, Arkansas. The job is at a busy retail butcher's shop. The role involves take customer orders and advise on cuts and cooking; debone shoulders, legs and loins with a boning knife; season and marinate meat on request; break down beef, mutton and chicken carcasses into primal cuts; run the band saw to cut cleanly through bone; trim fat, sinew and silver skin off the cuts. Requirements: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry Freshers welcome — about 6 years of practice is enough.
