Requirements: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics You will rotate stock and follow FIFO on raw materials; load and unload the deck oven with a peel; check finished products for colour, crumb and weight; roll out short-crust and biscuit dough; pipe and fill cakes, pastries and cream rolls.
