Ideal candidate: • Physically fit to lift carcasses and stand all day • Clean, presentable and friendly at the counter Day to day you will take customer orders and advise on cuts and cooking; break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; run the band saw to cut cleanly through bone; debone shoulders, legs and loins with a boning knife; dress the chilled counter and rotate stock by date.
