Vacancy available: head baker (Illinois)

Great opportunity: we are hiring a head baker in Henderson County, Illinois. You will be based at a busy bakery. On a typical shift you will prove dough in the proofer at the right temperature and humidity; check finished products for colour, crumb and weight; shape loaves, rolls, baguettes and buns by hand; laminate puff and croissant dough by folding in the butter; monitor oven temperature and baking time for each batch; proof and fry doughnuts, then glaze them. Ideal candidate: • Knowledge of dough fermentation and proving • Understanding of food-safety and HACCP basics Pay around $180 per day, based on your experience. Overtime paid at a premium rate.
