The role involves monitor oven temperature and baking time for each batch; weigh and mix flour, yeast, water and salt to the day's recipe; check finished products for colour, crumb and weight; roll out short-crust and biscuit dough; prove dough in the proofer at the right temperature and humidity. Requirements: • Able to stand for long hours in a hot kitchen • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving 1+ years on the tools preferred.
