Confectioner — Henry County

Immediate opening: we are hiring a confectioner in Henry County, Tennessee. The job is at a café with an on-site bakery. Day-to-day duties: • Shape loaves, rolls, baguettes and buns by hand • Rotate stock and follow FIFO on raw materials • Boil sugar syrup for glazes and icing • Laminate puff and croissant dough by folding in the butter • Monitor oven temperature and baking time for each batch • Load and unload the deck oven with a peel Requirements: • Able to work early-morning and night shifts • Knowledge of dough fermentation and proving On-the-job training and a clear path to grow.
