The role involves trim fat, sinew and silver skin off the cuts; weigh, price and label cuts for the display case; dress the chilled counter and rotate stock by date; season and marinate meat on request; mince meat and prepare keema on the grinder; stuff and link fresh sausages with casings. You should have: • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling • 2+ years experience working as a butcher 1+ years on the tools preferred.
