You should have: • Comfortable working in cold rooms and chillers • Knowledge of halal slaughter and handling where required • Quick and accurate on the weighing scales and order maths Day-to-day duties: • Run the band saw to cut cleanly through bone • Break down beef, mutton and chicken carcasses into primal cuts • Sharpen and hone knives on a steel and whetstone • Dress the chilled counter and rotate stock by date Overtime paid at a premium rate.
