Requirements: • Comfortable working in cold rooms and chillers • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling On the job you will handle: • Stuff and link fresh sausages with casings • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Debone shoulders, legs and loins with a boning knife Pay around $3,300 per month, based on your experience.
