Meat cutter — Franklin County

Urgent requirement: we are hiring a meat cutter in Franklin County, Kansas. Ideal candidate: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler Day-to-day duties: • Sharpen and hone knives on a steel and whetstone • Break down beef, mutton and chicken carcasses into primal cuts • Take customer orders and advise on cuts and cooking • Portion steaks, chops and cutlets to the ordered weights • Monitor chiller and freezer temperatures to keep the cold chain • Keep halal cuts separated and clearly handled Freshers welcome — about 5 years of practice is enough.
