What we are looking for: • Knowledge of dough fermentation and proving • Able to stand for long hours in a hot kitchen • Accurate at weighing and following recipes On a typical shift you will prove dough in the proofer at the right temperature and humidity; keep work surfaces and equipment clean to food-safety standards; roll out short-crust and biscuit dough; decorate cakes with icing, fondant and fresh cream. 4+ years on the tools preferred. $4,700 per month, negotiable for the right hands.
