Now hiring: we are hiring a head baker in Bland County, Virginia. Ideal candidate: • Food handler / hygiene certificate • Familiar with deck, rack and convection ovens Day to day you will shape loaves, rolls, baguettes and buns by hand; knead and develop dough by hand and in the spiral mixer; load and unload the deck oven with a peel; rotate stock and follow FIFO on raw materials; decorate cakes with icing, fondant and fresh cream; boil sugar syrup for glazes and icing. $4,500 per month, negotiable for the right hands.
