You should have: • Familiar with deck, rack and convection ovens • Knowledge of dough fermentation and proving On a typical shift you will boil sugar syrup for glazes and icing; shape loaves, rolls, baguettes and buns by hand; proof and fry doughnuts, then glaze them; keep work surfaces and equipment clean to food-safety standards; weigh and mix flour, yeast, water and salt to the day's recipe; pipe and fill cakes, pastries and cream rolls.
