Day to day you will break down beef, mutton and chicken carcasses into primal cuts; vacuum-pack and wrap customer orders; sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone; keep HACCP hygiene records and sanitise the block and tools.
