Requirements: • Able to work early-morning and night shifts • Able to stand for long hours in a hot kitchen Day to day you will score the top of loaves before baking; load and unload the deck oven with a peel; shape loaves, rolls, baguettes and buns by hand; prove dough in the proofer at the right temperature and humidity; boil sugar syrup for glazes and icing; knead and develop dough by hand and in the spiral mixer.
