The role involves shape loaves, rolls, baguettes and buns by hand; check finished products for colour, crumb and weight; weigh and mix flour, yeast, water and salt to the day's recipe; prove dough in the proofer at the right temperature and humidity; keep work surfaces and equipment clean to food-safety standards.
