Sausage maker — Perry County

Great opportunity: we are hiring a sausage maker in Perry County, Mississippi. On the job you will handle: • Break down beef, mutton and chicken carcasses into primal cuts • Monitor chiller and freezer temperatures to keep the cold chain • Vacuum-pack and wrap customer orders • Keep HACCP hygiene records and sanitise the block and tools • Season and marinate meat on request • Keep halal cuts separated and clearly handled Ideal candidate: • Knowledge of halal slaughter and handling where required • Able to identify primal cuts of beef, mutton and poultry Rotating shifts.
