Ideal candidate: • Willing to work split shifts, weekends and public holidays • Good teamwork and clear communication under pressure • Able to lift heavy stock pots and sacks of supplies Day-to-day duties: • Prepare the mise en place before each service • Follow cleaning schedules and wash down work surfaces • Monitor food temperatures and run regular HACCP checks • Prepare stocks, sauces and soups from scratch • Knead dough and bake breads such as roti, naan and paratha • Manage the tandoor and skewer kebabs Freshers welcome — about 4 years of practice is enough.
