You should have: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Confident knife skills and safe blade handling On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; portion steaks, chops and cutlets to the ordered weights; season and marinate meat on request; vacuum-pack and wrap customer orders. 1+ years on the tools preferred.
