Requirements: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes The role involves: • Monitor oven temperature and baking time for each batch • Shape loaves, rolls, baguettes and buns by hand • Keep work surfaces and equipment clean to food-safety standards • Load and unload the deck oven with a peel Rotating shifts.
