You should have: • Knowledge of dough fermentation and proving • Accurate at weighing and following recipes You will decorate cakes with icing, fondant and fresh cream; load and unload the deck oven with a peel; rotate stock and follow FIFO on raw materials; proof and fry doughnuts, then glaze them.
