Vacancy available: we are hiring a butcher in Caroline County, Virginia. You will be based in a hotel or restaurant butchery. Requirements: • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry Day-to-day duties: • Stuff and link fresh sausages with casings • Trim fat, sinew and silver skin off the cuts • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Dress the chilled counter and rotate stock by date • Run the band saw to cut cleanly through bone At least 2 year(s) in a similar role.
