Ideal candidate: • Food handler / hygiene certificate • Understanding of food-safety and HACCP basics Day-to-day duties: • Weigh and mix flour, yeast, water and salt to the day's recipe • Proof and fry doughnuts, then glaze them • Keep work surfaces and equipment clean to food-safety standards • Laminate puff and croissant dough by folding in the butter • Knead and develop dough by hand and in the spiral mixer Six days a week, one day off.
