The role involves: • Laminate puff and croissant dough by folding in the butter • Score the top of loaves before baking • Weigh and mix flour, yeast, water and salt to the day's recipe • Roll out short-crust and biscuit dough • Prove dough in the proofer at the right temperature and humidity Ideal candidate: • Able to stand for long hours in a hot kitchen • Accurate at weighing and following recipes Six days a week, one day off.
