Requirements: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry • Able to use a band saw, grinder and sausage filler The role involves take customer orders and advise on cuts and cooking; debone shoulders, legs and loins with a boning knife; break down beef, mutton and chicken carcasses into primal cuts; keep halal cuts separated and clearly handled; weigh, price and label cuts for the display case; monitor chiller and freezer temperatures to keep the cold chain.
