What we are looking for: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens • Able to lift 25 kg flour sacks The role involves proof and fry doughnuts, then glaze them; check finished products for colour, crumb and weight; weigh and mix flour, yeast, water and salt to the day's recipe; monitor oven temperature and baking time for each batch; pipe and fill cakes, pastries and cream rolls; decorate cakes with icing, fondant and fresh cream.
