Immediate opening: dough maker (California)

Now hiring: we are hiring a dough maker in Placer County, California. You will be based at a neighbourhood confectionery. On a typical shift you will laminate puff and croissant dough by folding in the butter; roll out short-crust and biscuit dough; shape loaves, rolls, baguettes and buns by hand; knead and develop dough by hand and in the spiral mixer; boil sugar syrup for glazes and icing; prove dough in the proofer at the right temperature and humidity. Ideal candidate: • Accurate at weighing and following recipes • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens At least 4 year(s) in a similar role.
