On the job you will handle: • Stuff and link fresh sausages with casings • Take customer orders and advise on cuts and cooking • Vacuum-pack and wrap customer orders • Weigh, price and label cuts for the display case • Break down beef, mutton and chicken carcasses into primal cuts • Portion steaks, chops and cutlets to the ordered weights You should have: • Able to identify primal cuts of beef, mutton and poultry • Comfortable working in cold rooms and chillers • Physically fit to lift carcasses and stand all day Freshers welcome — about 6 years of practice is enough.
