Sausage maker — Lancaster County

Great opportunity: we are hiring a sausage maker in Lancaster County, Nebraska. You will be based in a hotel or restaurant butchery. What we are looking for: • Knowledge of halal slaughter and handling where required • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry Your main tasks: • Sharpen and hone knives on a steel and whetstone • Portion steaks, chops and cutlets to the ordered weights • Monitor chiller and freezer temperatures to keep the cold chain • Dress the chilled counter and rotate stock by date • Keep HACCP hygiene records and sanitise the block and tools • Run the band saw to cut cleanly through bone Part-time with flexible hours.
