Requirements: • Confident knife skills and safe blade handling • Able to identify primal cuts of beef, mutton and poultry The role involves keep HACCP hygiene records and sanitise the block and tools; monitor chiller and freezer temperatures to keep the cold chain; sharpen and hone knives on a steel and whetstone; stuff and link fresh sausages with casings. 1+ years on the tools preferred.
