Now hiring: we are hiring a butcher in Grant County, New Mexico. On the job you will handle: • Dress the chilled counter and rotate stock by date • Season and marinate meat on request • Run the band saw to cut cleanly through bone • Break down beef, mutton and chicken carcasses into primal cuts • Trim fat, sinew and silver skin off the cuts You should have: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day • 2+ years experience working as a butcher Freshers welcome — about 3 years of practice is enough.
