Urgent requirement: we are hiring a butcher in Ottawa County, Ohio. You will be based at a wholesale meat market. The role involves: • Stuff and link fresh sausages with casings • Trim fat, sinew and silver skin off the cuts • Monitor chiller and freezer temperatures to keep the cold chain • Portion steaks, chops and cutlets to the ordered weights • Sharpen and hone knives on a steel and whetstone • Keep HACCP hygiene records and sanitise the block and tools Ideal candidate: • Physically fit to lift carcasses and stand all day • 2+ years experience working as a butcher • Able to identify primal cuts of beef, mutton and poultry Six days a week, one day off.
