The role involves sharpen and hone knives on a steel and whetstone; stuff and link fresh sausages with casings; break down beef, mutton and chicken carcasses into primal cuts; trim fat, sinew and silver skin off the cuts; portion steaks, chops and cutlets to the ordered weights; keep halal cuts separated and clearly handled.
