Immediate opening: we are hiring a dough maker in Santa Fe County, New Mexico. You should have: • Knowledge of dough fermentation and proving • Able to stand for long hours in a hot kitchen • Understanding of food-safety and HACCP basics The role involves: • Proof and fry doughnuts, then glaze them • Keep work surfaces and equipment clean to food-safety standards • Knead and develop dough by hand and in the spiral mixer • Laminate puff and croissant dough by folding in the butter $28 per hour, negotiable for the right hands.
