Ideal candidate: • Familiar with deck, rack and convection ovens • Understanding of food-safety and HACCP basics • Food handler / hygiene certificate The role involves shape loaves, rolls, baguettes and buns by hand; score the top of loaves before baking; rotate stock and follow FIFO on raw materials; knead and develop dough by hand and in the spiral mixer. 6+ years on the tools preferred.
