Day to day you will weigh, price and label cuts for the display case; sharpen and hone knives on a steel and whetstone; run the band saw to cut cleanly through bone; trim fat, sinew and silver skin off the cuts; keep HACCP hygiene records and sanitise the block and tools. Ideal candidate: • Clean, presentable and friendly at the counter • Knowledge of halal slaughter and handling where required $2,900 per month, negotiable for the right hands.
